In the late 19th century, Chinese immigrants started arriving in Peru as farm workers, often laboring under terrible conditions.
However, some immigrants made their way into the cities bringing with them their culinary traditions and -eventually- importing their own ingredients from China.
This gave rise to the culinary tradition of ‘chifa’, a fusion of Chinese and Peruvian ingredients and dishes that was quickly embraced by Peruvian society and later the whole world.
